A Week Full of Favorites: Celebrating Sisters, Friends, & National Chocolate Chip Cookie Day!

This week is jam packed with reasons to celebrate some of the best relationships in our lives!  With National Girlfriends Day taking place earlier this week (July 31st), plus National Sisters AND Friendship Day coming up this Sunday (August 6th), we couldn’t ask for many more reasons to celebrate, but we have one! Today is National Chocolate Chip Cookie Day and, let’s be honest, if we could be in a relationship with one of those warm morsels of goodness, we would be.  No shame.

Whether you decide to celebrate with your whole girl squad, a group of your favorite gals AND guys (hey – we don’t discriminate!), or your eternal partner(s) in crime – your sister(s), these chocolate chip cookie inspired recipes will be sure to take your gathering to the next level.  So text/call your crew, grab the chocolate chips from your cupboard, and get ready to indulge in all of the flavor and fun with the following five recipes!

1.  Chocolate Chip Cookie Cake

We’re drooling over this delicious looking cookie cake!  This recipe serves 24 (if your guests are modest 😉), making it perfect for gathering around or serving up by the slice with a scoop of your favorite ice cream.  Score some bonus points by using a heart-shaped pan – it adds an adorable touch.  

Ingredients (Serves 24)

  • 1 cups butter
  • ¾ cups sugar
  • 1 cups brown sugar
  • 1 Tbsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 3 cups flour
  • 2 cups chocolate chips
  • Sea salt

Instructions:

  1. In a saucepan over medium heat, melt butter.  Swirl it until brown in color & it reaches a nutty aroma.  Remove from heat.
  2. Meanwhile, combine sugar, brown sugar, and vanilla in a mixing bowl.  Mix browned butter in.
  3. Gently blend in eggs, careful not to over mix.
  4. Sprinkle baking soda, baking powder, salt, & flour over mixture & fold in until combined.
  5. Fold in chocolate chips once batter has slightly cooled.
  6. Scoop dough into greased baking dish/pan
  7. Preheat oven to 350°F & bake 15 minutes {slightly less for a thinner cake} 


2.  Inside Out Chocolate Chip Cookies

This recipe offers up a twist on the classic chocolate chip cookie in the form of a total role reversal and we love it.  Whether you’re dreaming of extra chocolatey cookies or you only have white chocolate chips on hand, give this recipe a try!  Combine these on a tray with traditional chocolate chip cookies for a beautiful party presentation that packs the contrast and the flavor!

Ingredients (Serves 16 Cookies)

  • 4 ounces (1 stick) salted butter, room temperature
  • 1 cup firmly packed light brown sugar
  • 1 egg
  • ¾ cup all purpose flour
  • ⅓ cup cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 cup white chocolate chips (suggested: Ghirardelli)

Instructions:

  1. Preheat your oven to 350°F.  Lightly grease a baking sheet and set aside.
  2. In a medium bowl, cream the butter and brown sugar together until the mixture becomes light and airy (with a KitchenAid, about 2 minutes. with a manual whisk, about 5 minutes).  Add in the egg and vanilla.
  3. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.  Next, add the dry ingredients into the butter mixture, stirring until just combined.  Gently fold in the white chocolate chips, being careful not to overmix the dough.
  4. Scoop roughly 1½ inch spheres of dough onto a cookie sheet, leaving about 2 inches of space in between each ball of dough.  Bake for 10-12 minutes, being sure to keep an eye on the consistency of the baking cookies.  Let cool on a rack for 10 minutes before serving.
  5. Devour.

Notes:

Cookie bake times will greatly vary by ovens.  Instead of taking them out at a certain time, look for a consistency where the cookie has risen and is soft to the touch, but does not feel wet and spongy underneath the surface.  For the best consistency, bake your cookies in two batches, as you will learn from the first batch if you need more or less time for the second.  And remember, all cookies continue to cook when after they are taken out of the oven.  So when in doubt, take your cookies out a minute early! 



3.  Chocolate Chip Cookie Dough Dip

Admit it: we’re all guilty of stealing cookie dough straight from the mixing bowl before the cookies even make it to the oven, despite knowing the risks of consuming raw eggs.  That’s why this cookie dough dip recipe is the perfect fix:  it’s egg free, easy to whip up, and will satisfy all of your cookie dough cravings.  So ditch the eggs and forget about preheating the oven!  Serve it up with graham crackers, Nilla wafers, pretzels, fruit slices, or just by the spoonful.  Your sister won’t care if you double dip, right?  

Ingredients (Serves 6 – 8)

  • ½ cup unsalted butter, cut into small pieces
  • ⅓ cup light brown sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • ½ cup powdered sugar
  • ¾ cup semisweet mini chocolate chips
  • Graham crackers or Nilla wafers, to serve

Instructions:

  1. In a small saucepan, melt the butter, brown sugar, and salt over medium-low heat, stirring continuously, until the brown sugar dissolves.  Remove from the heat, whisk in the vanilla extract, and set aside to cool to room temperature.
  2. With an electric mixer on medium speed, beat the cream cheese and powdered sugar for 1 minute, until smooth and fluffy.
  3. Reduce the mixer speed to low and slowly beat in the cooled butter mixture.  Increase the speed to medium and beat for 1 minute.  Stir in the chocolate chips.
  4. Transfer the dip to a serving bowl and refrigerate if not serving immediately.  Remove from the refrigerator 15 to 30 minutes before serving.  Serve with graham crackers or Nilla wafers.  Leftovers can be stored in the refrigerator for up to 5 days. 


4.  Cookie Dough Milkshakes

Cookie Dough + Milkshakes = 😍.  If your friends and family didn’t already love you unconditionally, this heavenly combo is sure to win their undying affection and blow up their Instagram page.  Whether you are serving a large group or a party of two, this milkshake is the definition of TREAT YO’SELF.

Ingredients
Milkshake:

  • 1 ¼ cups of milk
  • 4 cups vanilla ice cream
  • 1 cup cookie dough (see below)
  • ½ cup chocolate chips
  • Whipped cream
  • ½ cup cookie dough for rim garnish
  • ⅓ cup milk chocolate chips for rim garnish
  • 1 chocolate chip cookie per glass for garnish

Cookie Dough:

  • ¾ cup shortening
  • 1¼ cups packed brown sugar
  • ¼ cup granulated sugar
  • ¼ cup milk
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • 2 cups + 2 Tbsp flour, sifted
  • ½ tsp salt
  • 1 cup milk chocolate chips

Instructions:

  1. Start by making your cookie dough.  Combine the shortening with the sugars and salt and mix in your stand mixer.  Then mix in your milk and vanilla, and then slowly add the flour.  Once combined, if too dry, add in your 2 Tbsp of water, 1 Tbsp at a time.
  2. Next, add your cookie dough (minus chocolate chips) to the rims of your glasses and then immediately roll in chocolate chips and place in the freezer to harden.
  3. Next, make your milkshake.  Combine milk, ice cream, 1 cup of cookie dough, and ½ cup of chocolate chips in your blender and blend.
  4. Pour milkshake into each glass, top with an extra spoonful of cookie dough (with chocolate chips), add whipped cream and a cookie on top.
  5. Enjoy!


5.  Microwave Chocolate Chip Cookies

If you’re practicing your self-control, if all you need is just a taste, or if you’re simply serving yourself + one, try making these quick and easy microwavable cookies in a mug or ramekin!  The cookies will be ready in seconds, but sharing one of these with your sister or a friend will surely deliver instant satisfaction! 

Ingredients (Serves 1)

  • 1 Tbsp butter, melted
  • 1 Tbsp granulated sugar
  • 1 Tbsp brown sugar
  • ⅛ tsp vanilla
  • 1 large egg yolk (do not use egg white)
  • ¼ cup all-purpose flour (Spoon it into the measuring cup and then level it so it’s not packed in tight.)
  • ⅛ tsp salt
  • 2 Tbsp chocolate chips

Instructions:

  1. Add the butter, sugars, vanilla, and egg yolk to a microwave safe dish like a ramekin or mug (a flat 4 in./8 oz. ramekin will bake more evenly than a mug, just FYI).  Mix well.
  2. Add the flour, salt, and chocolate chips.  Mix and flatten the top evenly.  Top with extra chocolate chips, if desired.
  3. Cook in the microwave for 40 to 60 seconds until just set.  Time will vary depending on the dish used and power of the microwave.  Enjoy warm!

 



Separated from your bestie or your sister by long distance?  Don’t stress!  You can still celebrate with them by sharing one of these recipes, or by sending them a little care package full of cookies (probably not a good idea to ship the milk shake ;)).
